The earthiness of the beetroot works very well with the chili and the Za’atar, it brings out the sweetness of the beetroot, but the Za’atar gives it a deep savoury flavour and the taste is wonderful.
The yogurt gives the Beetroot a creamy rich texture, this wonderfull purée is very versatile; it can served as a Sandwich Spread or a dip. It’s extremely healthy and easy to make.

Spicy Beetroot,Yogurt, Za’atar PuréePrint Recipe
- Main ingredients
- 500g of cooked Beetroot
- 2 Garlic cloves, crushed
- 1 small red Chilli, deseeded and finely chopped
- 250g Greek yoghurt
- 1 1/2 tbsp Date molasses
- 3 tbsp olive oil, plus extra to finish the dish
- 1 tbsp of Palestinian Za’atar
- 80g Feta Cheese
- Handfull of Nuts
- Handfull of Nuts & Seeds
Puree all the main ingredients together till fairly smooth.
Leave it to marinade in the fridge for an hour.
Garnish with olive oil, Za’atar and feta.
Be sure to serve it cold.
