Lentils, Vegetables & Eggs make for a great start to the day. Its a protien packed colourful way to brighten up your morning. Healthy and simple, this should definitely be part of your weekly breakfast plan.

- 4 Eggs
- 160g cooked lentils
- 4 radishes (sliced)
- 1 Carrot (grated)
- Handfull of Rocket
- 4 pieces of asparagus (cooked)
- 4 pinches of chilli flakes
- Micro cress
- Olive Oil
- Salt & Pepper
Lightly oil a cup or Ramekin with olive oil.
Crack an egg into each cup and place in the oven at 120’c for 7 minutes till the whites are set.
Arange the Vegetables, Rocket & lentils artistically in the cup.
Sprinkle the chilli flakes and fresh corriander and micro greens.
Serve and enjoy.
