The Levantine Tomato, Feta & lentil is one of my biggest lunchtime sellers, its just a lovely simple salad, the crunchy lentils combined with the Tomato’s and the aromatic dressing are perfect in the warmer months.
The crunchy lentils will keep you nicely filled up till teatime, being a classic slow carb and packed full of protien, the slow energy release process of the lentils will almost certianly prevent that mid afternoon dip.
This recipe is an excellent lunch box salad, make it at home the night before, add some Tuna or mackerel, it will marinade overnight and the flavour will only increase.
Levantine Tomato, Feta & lentilPrint Recipe
- 400g Cooked lentils
- 1 cucumber diced
- 2 Tablespoons of Roughly chopped mint
- 4 tablespoons of sliced Sun dried Tomato’s
- 100g Feta cheese
- 3 handfuls of rocket
- 4 tablespoons of toasted mixed seeds (for topping)
- 3 tablespoons Olive oil
- 1 lime, Juiced
- 1 Red chilli chopped
- 1 clove of garlic crushed
- 2 Tablespoons of fresh corriander
- Dill shoots
Mix the lentils, Cucumber with the mint in a large bowl.
Take the dressing ingredients in a small bowl, and give it a good mix.
Mix all the ingredients together, season to your personal taste.
Top with seeds and herbs and serve
