Damo’s Healthkick Kale Caesar

Everyone knows the original Caeser salad, it was a thing to behold. infact it is easily the most popular salad on earth and in my opinion has been done to death. Sweet processed cheap ceaser dressings are often used to mask the flavour of crappy ingredients prepared by Dollar store chefs, its the one thing on the menu i never order unless i know the chef.

I decided to give it a slightly healthy upgrade, with absolutely no compromise on the flavour of the original recipe, just ensuring that you get the most protien packed; Vitamin enriched, nutritional value from your salad.

The addition of finely sliced Kayle and spring greens give the ceaser some extra crunch and i believe a added dimension, the dressing has a natural saltyness which comes through with the bitterness of the yogurt to really complete the salad.

This salad is a complete ceaser upgrade from the average and certainly on par with the original.







Damo’s Healthkick Kale Caesar

Print Recipe
Serves: 4 Cooking Time: 30 minutes


  • 400g Kale, stem removed
  • 3 little gem lettuce
  • 200g spring greens
  • 400g cooked chicken
  • 12 salted anchovies
  • 4 tablespoons of grated parmesan
  • 1 tablespoon of Chopped Chives
  • 4 Free range eggs, boiled
  • Hand-full of large Brioche crutons
  • Dressing
  • 2 tablespoons mayonnaise
  • 2 tablespoons of full fat natural yogurt
  • 1 tablespoon of honey
  • 1 tablespoon of Capers
  • 1 large dill pickle
  • Handfull of chopped parsley
  • 1 Lemon juice of
  • Oil from anchovies to taste
  • Salt & pepper



Shred the kale, little gem & spring greens very thinly with a large knife, mix into a large bowl


Blend all the dressing ingredients together, adding the anchovy oil at the end (to suit your to taste)


Mix the dressing, with the salad mixture thoroughly, separate between 4 bowls


Top each salad with an equal share of the rest of the ingredients

This is how finely you should be chopping the greens.
