Fregola & Chorizo

You might be wondering what Fregola is?  Its very similar to Isreali cous-cous, but its a pasta from Sardinia which is toasted; this gives Fregola a lovely nutty flavour. It has an added bonus of scoring less than 0.5 on the glycimic index meaning its pretty healthy.

Sometimes its nice to have warm ingredients in a salad, the contrast between the textures are really nice. I am a massive fan of salty food in the right context, the chorizo is quite flavoursome and salty; and the juices it secreets act as a sort of dressing and really compliment the feta, the crunch of the sprouts and the pine nuts really finish this dish off.
