Sometimes simple is best. The Melon & Prosciutto combination is a 1980’s italian restaurant throwback, but the simple flavour combination hasn’t aged; its as relevant today as it was back then.
The sweetness of the melon with the salty texture of the prosciutto, has been brought right up-to date with the lovely peppery rocket and the freshness of the raw garden peas. Sprinkled with the suprise inclusion of the Sumac, which finishes of the dish with a lovely citrus pungent flavour.
This is the sort of dish where the ingredients speak for themselves, where the food just falls onto the plate and everything just works.
Back to the Future Rocket-Melon-ProsciuttoPrint Recipe
- ½ Cantaloupe Melon
- 6 slices of Prosciutto
- Handfull of Rocket
- Olive Oil
- Raw Peas
- Black Pepper
Peal the melon, using a peeler shred it into thin strips into a bowl.
Tear the prosciutto into thin strips, add to the melon
Mix in the Rocket and drizzle with olive oil
Turn the contents of the bowl out onto your serving platter
Sprinkle the peas and sumac artistically over the top
Finish with a extra sprinkle of olive oil and a crank of black pepper
